Things have taken a dramatic turn in the financial world surrounding Pinky Cole and her popular restaurant ventures. A former executive linked to her Bar Vegan establishment is now facing serious accusations from Georgia prosecutors. This individual is alleged to have orchestrated a scheme involving fake wire transfers, potentially costing the company a significant amount of money.
The Charges Against Aaron Mattison
The former chief financial officer and co-owner, Aaron Mattison, has been indicted on multiple felony charges. These charges include theft by taking, first-degree forgery, and money laundering. Prosecutors claim that between 2021 and 2022, Mattison allegedly created fraudulent financial documents that mimicked official Bar Vegan approvals.
These fabricated documents were reportedly used to execute wire transfers totaling $87,300 for his personal benefit. Beyond the wire transfers, authorities also allege that Mattison made repeated cash withdrawals of $600, accumulating over $24,999. This money was then allegedly moved across various accounts as part of a money laundering operation.
A Prominent Figure in the Restaurant Empire
Before these accusations surfaced, Mattison presented himself as a key player in expanding Pinky Cole’s vegan restaurant empire. He often spoke about his background in finance, mentioning stints on Wall Street in investment banking and private equity, followed by strategy and consulting roles after business school. His involvement with Bar Vegan and other Atlanta hospitality projects made him a visible figure.

Past Legal Troubles and Bankruptcy
This isn’t the first time Bar Vegan has been in the news for legal issues. The now-closed restaurant previously faced a lawsuit from former employees concerning unpaid wages and withheld tips, which was eventually settled for a substantial sum. It’s important to note that Pinky Cole herself has not been charged in connection with Mattison’s case.
These recent developments also come on the heels of Cole’s Chapter 11 bankruptcy filing in March 2026, which cited liabilities estimated between $1.3 million and $1.4 million. Cole had previously denied intentionally withholding wages, attributing past issues to the strains of rapid business growth.
